Head Chef

As head chef of our Chelsea store you will be responsible for food served in the seafood bar. Menus need to be adapted daily to make best use of the produce in store and an ability to adapt and create on the spot is essential. Working closing with Leo you will help develop the shape of the menu, championing seasonal produce and advanced techniques. Please note the kitchen in Chelsea has minimal cooking equipment and dishes are on treatment of very high quality ingredients. You will work closely with the fishmonger side of the business to ensure optimal stock management efficiency and also be willing to step over the counter onto the retail side to help where needed and give cooking advice to retail customers. This is a customer facing role and the successful candidate will have great social as well and cooking skills.

Role & Responsibilities

  • Maintaining the highest standards of food and service
  • Controlling food cost and hitting GP targets
  • Maintaining high standards of HACCP
  • Level 3 food and safety certification
  • Managing a small kitchen team
  • Bringing fresh ideas and thinking outside the box to drive the business forward
  • Work directly with the Restaurant Manager to ensure guest satisfaction
  • Work closely to support retail team
  • Report to the Executive Chef
  • Dish development and menu management
  • Experience in high quality restaurant minimum 2 years
