Wild bass, line caught off the coast of Cornwall. Highly prised for its firm texture and meaty flavour. Packed with umami it is delicious grilled or roasted whole or cut into fillets and steamed, baked or pan fried. It can also be served raw as a deliciously meaty carpaccio or for sashimi.
Bass in the UK is once again sustainable. There is a nationwide ban during the spawning season allowing stock to replenish annually. Line caught bass is the most sustainable choice as there is little to no impact on the local ecosystem and fish do not feed while spawning so they will not take the bait and bite the hook during that crucial time.
When line caught bass is not available we buy from small day boats that use targeted nets. These have less impact on the environment than bigger boats and trawlers.
