Mussels with allium XO

Add a large dash of olive oil to a large pot and bring to the heat. 

Once hot add the mussels and cook over a medium heat lid on.
Stir the pot every 2 minutes to ensure even cooking. 
Once mussels are open remove the lid and add 3 spoonfuls of allium XO. Stir. 
Slice lemon and drizzle into pot. 
Stir and taste. Add salt if needed.
