Seafood Croquetes

500 ltr of whole milk
1 cloves of garlic
95 butter
90 flour
100 gr of fish or shellfish
1 white onion chopped very fine
40 of olive
1 bay leaves
Sea salt to season
Nutmeg to season
Black pepper corns on a mill
Panko bread crumbs
Egg yolks to pane



Cut the fish into small bits, removing any fish bones and skins. Sweat the onion on the olive oil together with the garlic and bay leave for 10 minutes until they become glossy!

Add the fish, and cook down then the butter and flour, add the milk and cook like a bechamel.

This needs to cook until the mixture has a firm texture and its not floury. Check seasoning with salt, pepper and nutmeg.

Cool down before shaping into balls of 30 gr each.

Pane with egg yolk and bread panko twice.
