Steamed john dory fillets with cheese flan and broccoli

John dory fillets – 600 gr
Broccoli 1 head
200 gr of cream
50 gr of flour
25 gr of butter
100 gr of grated cheese
2 egg whites wiped
On a pan heat up the cream, butter and flour together, mix well over the heat to obtain a smooth pure.
Remove from the heat and season with salt, black pepper and nutmeg. Incorporate de egg yolks and cheese, mix well and re check seasoning.
Once cold wipe to soft picks the egg whites and incorporate into the previous mixture like a mousse.
Oil some baking tins, fill them up and bake at 200C for 9 mins.
Let it cool a bit before removing from heat.
Cut the broccoli into small pieces and cook them in olive oil in a pan, season with salt and pepper and a touch of hazelnut oil.
Serve the fillets steamed, broccoli and cheese flan.
